Hight Protein Slow Cooker Shredded Chicken Burrito

  • 3 lb Chicken breast
  • 2 can Black beans
  • 1 can Canned Corn
  • 2 clove Garlic
  • 1 packet Taco seasoning
  • 2 whole Red bell pepper
  • 10 oz Salsa
  • 1 cup White or brown rice
  • 1 cup Chicken broth
  • 12 oz Shredded Cheese


  • Trim fat from chicken breasts and cut them in half.
  • Put halved chicken in the slow cooker.
  • Add rinsed black beans, rice, and chicken broth to the cooker.
  • Stir everything together, keeping chicken covered in liquid.
  • Cover and cook on low for 7-8 hours or high for 4-5 hours.
  • Shred the chicken with forks and mix with rice and beans.
