  • 24 Muffin cups

  • 1.30 cup Whole Wheat Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Greek Yogurt Plain, Nonfat
  • 2 medium Raw Eggs
  • 1 cup Applesauce Unsweetened
  • 8 oz Monkfruit Sweetener Gold
  • 2 tsp Vanilla Extract
  • 200 g Sugar Free Chocolate Baking Chips


  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease the cups.
  • In a large mixing bowl, sift together the whole wheat flour, baking powder, and salt.
  • In a separate bowl, whisk together the Greek yogurt, raw eggs, unsweetened applesauce, Monkfruit Sweetener, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing to prevent the muffins from becoming tough.
  • Fold in the sugar-free chocolate baking chips gently into the batter.
  • Spoon the batter into the prepared muffin cups, filling each about three-quarters full.
  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  • Serve the muffins once cooled, or store in an airtight container for later.
