Equipment

  • 1 7 Quart Crockpot

Ingredients

  • 2 tablespoons olive oil
  • 2 pounds pork tenderloin lean
  • 1 large onion
  • 1 dash salt
  • 4 teaspoons dried oregano
  • 4 teaspoons ground cumin
  • 1 teaspoon coriander seed
  • 1/2 teaspoon cayenne pepper
  • 20 ounces tomatillos
  • 4 large jalapeño peppers
  • 1 1/2 cups poblano pepper
  • 5 garlic cloves
  • 2 1/2 cups chicken stock
  • 1 cup black beans canned and drained
  • 1 bay leaf
  • 32 ounces potatoes
  • 1 dash black pepper
  • 1 cup onion chopped
  • 1 cup fresh cilantro chopped
  • 1 cup canned tomatoes
  • 1 cup corn canned and drained

Instructions

Prep the ingredients

  • Chop all vegetables into rough chunks. Drain and rinse the beans and corn. Peel and cube the potatoes. Remove pepper seeds if you prefer less heat.

Make the green chili base

  • Add jalapeños, poblanos, tomatillos, most of the chicken stock, and cilantro to a blender. Blend until smooth. Add the garlic and blend again until fully combined. Set aside.

Prepare the pork

  • Cut the pork into 1 to 2 inch cubes.

Sear the pork and onions

  • Heat olive oil in large pans over high heat. Sear the pork in batches without overcrowding, browning on all sides. Once browned, add the onions and cook briefly. Remove from heat. This step is optional but adds flavor.

Assemble the chili

  • Add the pork and onions to a slow cooker. Add corn, black beans, canned tomatoes, seasonings, and bay leaf. Pour the green chili base over everything. Stir to combine.

Cook

  • Cover and cook on low for 4 to 5 hours.

Add the potatoes

  • After about 1 hour of cooking, add the potatoes. Continue cooking for another 3 to 4 hours, until the pork is tender and the potatoes are fully cooked.

Finish and serve

  • Remove the bay leaf. Stir well and portion into containers.
