Ingredients
  

  • 1 Pound Chicken breast (454g)
  • 1 15 oz can Great Northern Beans (425g)
  • 1 15 oz can Cannellini Beans (350g)
  • 4 oz Low-fat Cream Cheese (113 g)
  • 1 7 oz can Diced Green Chile’s
  • 1 can Corn 15 oz can drained and rinsed (452g)
  • 2 cloves Garlic chopped (6g)
  • 1 medium Yellow onion (110g)
  • 1 tsp Salt (6g)
  • ½ tsp Black Pepper (2g)
  • 1 tsp Ground Cumin (2g)
  • ¾ tsp Oregano (1g)
  • ¼ tsp Chili Powder (2g)
  • 4 oz Topping: Shredded cheese ½ oz Serving (96g)
  • 1 whole Topping: Avocado ⅛ Serving (136g)
  • 1 Bunch Topping: Cilantro 1 oz (224g)

Instructions
 

  • Heat a large pot or Dutch oven over medium heat.
  • Add the diced onion and minced garlic to the pot and sauté until the onion is translucent and fragrant, about 3-4 minutes.
  • Cut the chicken breast into bite-sized pieces and add it to the pot. Cook until the chicken is no longer pink in the center, about 5-6 minutes.
  • Drain and rinse the Great Northern beans and Cannellini beans. Add them to the pot with the cooked chicken.
  • Drain the canned corn and diced green chilies and add them to the pot as well.
  • Stir in the salt, black pepper, ground cumin, oregano, and chili powder. Mix well to coat all the ingredients.
  • Reduce the heat to low and add the low-fat cream cheese to the pot. Stir until the cream cheese has melted and incorporated into the chili, creating a creamy texture.
  • Allow the chili to simmer on low heat for at least 15-20 minutes, stirring occasionally to prevent sticking.
  • While the chili is simmering, prepare the toppings. Shred the cheese, slice the avocado, and chop the cilantro.
  • Once the chili has thickened and the flavors have melded together, it’s ready to serve.
  • Ladle the White Bean Chicken Chili into bowls and top each serving with shredded cheese, sliced avocado, and chopped cilantro.
  • Serve hot and enjoy!
